Pho is a Vietnamese soup consisting of rice noodles, fresh herbs, and meat, primarily beef or chicken, in a a beefy stock. The stock is made up of charred onions and ginger, as well as toasted rock sugar and star anise for enhanced flavour. Many Vietnamese eat pho for breakfast, when workers gather early in the morning to fill their stomachs before rush hour.
